Brie & Caramelised Fig Salad with Hemp oil, Maple & Ginger dressing

mmmm… Creamy Brie… double, triple or ash rolled – your choice!
This fancy salad has just 6 ingredients. Throw it together in no time at all, and it is sure to impress! The caramelised figs take barely 15 minutes in the oven, or could even be prepared ahead of time.
With Tasmanian Autumn figs in season, now is the perfect time to enjoy this sweet, creamy and fresh combination at it’s finest.
Brie & caramelised fig salad with hemp oil, maple & ginger dressing
Ingredients
- 180 g Rocket leaves
- 4 Fresh figs
- 250 g Brie cheese
- 2 tbsp Hemp Food Tasmania Hemp oil
- 2 tbsp Pure maple syrup
- 1/2 tsp Fresh grated ginger
Instructions
Caramelise the Figs:
- Preheat oven to 180 degrees Celsius and line a tray with baking paper.
- Cut the figs in to 8ths, lay on baking tray and brush with maple syrup. (Reserve 1 tbsp. of the syrup) and place in oven for 15 mins or until turning golden and caramelised.
For the Dressing:
- Combine the remaining maple syrup with the hemp oil and ginger and shake in a jar.
Serving
- Divide rocket between 2 plates.
- Slice the Brie in to wedges and arrange on the bed of rocket.
- Allow caramelised figs to cool to room temperature and place amongst the Brie.
- Drizzle with hempseed, maple and ginger dressing. Serve immediately.
