Preheat oven to 180 degrees Celsius and line a tray with baking paper.
Cut the figs in to 8ths, lay on baking tray and brush with maple syrup. (Reserve 1 tbsp. of the syrup) and place in oven for 15 mins or until turning golden and caramelised.
For the Dressing:
Combine the remaining maple syrup with the hemp oil and ginger and shake in a jar.
Serving
Divide rocket between 2 plates.
Slice the Brie in to wedges and arrange on the bed of rocket.
Allow caramelised figs to cool to room temperature and place amongst the Brie.
Drizzle with hempseed, maple and ginger dressing. Serve immediately.
