Hempseed Oil Savoury Muffins

Ingredients
- 1 Cup All-purpose flour
- 1 Cup whole wheat flour
- 1 Tbsp Baking Powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 Cup Hempseed Oil
- 1/2 Cup Plain Greek Yoghurt
- 1/2 Cup Milk
- 2 Large eggs
- 1 Cup Crumbled Feta cheese
- 1/2 Cup Chopped Spinach
- 1/4 Cup Sun-dried Tomato
- 2 Tbsp Chopped fresh basil
Instructions
- Preheat your oven to 350°F (175°C)and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and black pepper.
- In a separate bowl, whisk together the hempseed oil, Greek yogurt, milk, and eggs until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Fold in the crumbled feta cheese, chopped spinach, sun-dried tomatoes, and fresh basil.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Note: You can store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze them for longer storage. Simply reheat in the microwave or oven before serving.
